Officials with the Utah Department of Public Safety said the car was traveling westbound when it collided with the animal.
The driver, who was the only occupant in the vehicle, was extracted before he was transported by ground to the closest hospital. He was then flown to a trauma center on the Wasatch Front, according to DPS officials, in critical condition.
The cow died at the scene.
DPS officials said the Utah Highway Patrol is investigating how the cow got on the roadway and whether any other factors came into play.
